Herbed Fish & Potato Foil Packs

Ingredients
  

4 white fish fillets (like cod or tilapia)

4 medium potatoes, thinly sliced

2 cups cherry tomatoes, halved

1 small red onion, finely chopped

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped

2 tablespoons fresh dill, chopped

2 tablespoons olive oil

1 lemon, juiced and zested

Salt and pepper, to taste

4 large pieces of aluminum foil

Instructions
 

Preheat your grill or oven to 400°F (200°C).

    In a small bowl, mix the olive oil, lemon juice, lemon zest, garlic, parsley, dill, salt, and pepper to create a marinade.

      On a large piece of aluminum foil, arrange a layer of potato slices in the center, creating a small bed for the fish.

        Sprinkle the chopped red onion and halved cherry tomatoes over the potatoes.

          Place a fish fillet on top of the vegetable layer and generously drizzle the marinade over the fish and vegetables.

            Fold the foil over the ingredients, creating a tight seal to prevent steam from escaping. Ensure the packets are well-closed at the edges.

              Repeat the process with the remaining ingredients, making four foil packs in total.

                Place the foil packs on the grill or in the oven and cook for about 20-25 minutes, or until the fish flakes easily with a fork and the potatoes are tender.

                  Carefully open the foil packs (watch out for steam) and serve hot, garnished with additional fresh herbs if desired.
