1 lb fresh strawberries, hulled and sliced

2 tablespoons granulated sugar (for strawberries)

1 cup heavy whipping cream

2 tablespoons powdered sugar (for whipped cream)

1 teaspoon vanilla extract

12 mini sponge cakes or ladyfingers

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries with 2 tablespoons of granulated sugar. Toss gently and set aside to macerate for about 15-30 minutes, allowing the strawberries to release their natural juices.

    Make the Whipped Cream: In a mixing bowl, whip the heavy cream until it begins to thicken. Add the powdered sugar and vanilla extract. Continue whipping until soft peaks form. Be careful not to over-whip, as you want a light, fluffy texture.

      Assemble the Cups: In each serving cup, layer the bottom with pieces of mini sponge cakes or ladyfingers. Spoon a layer of the macerated strawberries over the cakes, allowing some of the sweet syrup to soak in.

        Add Whipped Cream: Next, dollop a generous amount of the whipped cream on top of the strawberries.

          Repeat Layers: Continue layering with another sponge cake or ladyfinger, more strawberries, and another dollop of whipped cream until the cups are filled. You can typically get two to three layers depending on the size of the cups.

            Garnish and Serve: Finish with a final layer of whipped cream and garnish each cup with a sprig of fresh mint if desired. Serve immediately to enjoy the fresh textures and flavors.
