Ingredients

For the Meat Filling:

1 lb (450g) ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium carrots, diced

1 cup frozen peas

1 cup beef broth

2 tbsp tomato paste

1 tbsp Worcestershire sauce

1 tsp dried thyme

Salt and pepper to taste

2 tbsp olive oil

For the Mashed Potato Topping:

4 medium russet potatoes, peeled and cubed

4 tbsp unsalted butter

1/2 cup milk (or heavy cream for richness)

Salt and pepper to taste

1/4 cup shredded cheddar cheese (optional)

Instructions

Preheat the oven to 400°F (200°C).

    Make the Mashed Potatoes:

      - In a large pot, add the cubed potatoes and cover them with cold water. Add a pinch of salt and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes.

        - Drain the potatoes well, then return them to the pot. Mash with butter and milk until smooth. Season with salt and pepper. For extra flavor, fold in shredded cheddar cheese if using.

          Prepare the Meat Filling:

            - In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and sauté for an additional minute.

              - Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

                - Stir in diced carrots and cook for about 5 minutes until slightly softened. Add frozen peas.

                  - Pour in beef broth, tomato paste, Worcestershire sauce, thyme, and season with salt and pepper. Bring to a simmer and let it cook for about 10 minutes, allowing flavors to meld together and the mixture to thicken.

                    Assemble the Shepherd’s Pie:

                      - In an oven-safe dish, spread the meat filling evenly on the bottom. Top it with the mashed potatoes, spreading it out to cover the filling completely. Use a fork to create texture on top if desired.

                        Bake the Shepherd's Pie:

                          - Place the assembled pie in the preheated oven and bake for about 25-30 minutes, or until the top is golden brown and slightly crispy.

                            Serve:

                              - Remove from the oven and let it rest for 5 minutes before serving. Enjoy this homestyle dish with a side salad or some crusty bread!
