1 lb (450g) beef chuck roast, cut into 1-inch cubes

1 cup pearl barley

1 medium onion, diced

3 cloves garlic, minced

3 large carrots, diced

2 stalks celery, diced

4 cups beef broth

2 cups water

1 can (14.5 oz) diced tomatoes, undrained

1 tablespoon tomato paste

2 teaspoons dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

2 tablespoons Worcestershire sauce

Fresh parsley, chopped (for garnish)

Brown the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and season with salt and pepper. Brown the beef on all sides (about 5-7 minutes). Remove the beef and set aside.

    Sauté Vegetables: In the same pot, add the onion, carrots, and celery. Sauté until the vegetables start to soften, about 5 minutes. Add the garlic and cook for an additional minute, stirring frequently.

      Combine Ingredients: Return the browned beef to the pot. Stir in the pearl barley, beef broth, water, diced tomatoes (with juice), tomato paste, thyme, rosemary, and bay leaf. Add Worcestershire sauce for an extra depth of flavor.

        Simmer: Bring the mixture to a boil. Once boiling, reduce heat to low and cover. Simmer for about 1.5 to 2 hours, or until the beef is tender and the barley is cooked.

          Final Seasoning: Taste the soup and adjust the seasoning with salt and pepper as needed. Remove and discard the bay leaf.
