6 large russet potatoes, peeled and thinly sliced

8 oz (225 g) bacon, diced

1 medium onion, finely chopped

3 cups shredded sharp cheddar cheese

1 cup sour cream

1 cup heavy cream

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1 tablespoon fresh chives, chopped (for garnish)

Preheat oven to 375°F (190°C). Grease a large baking dish (about 9x13 inches) with cooking spray or butter.

    Cook the bacon: In a large skillet over medium heat, add the diced bacon. Cook until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pan.

      Sauté the onions: In the same skillet, add the chopped onion and sauté in the bacon fat until softened and translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

        Prepare the creamy mixture: In a large bowl, combine the sour cream, heavy cream, smoked paprika, and black pepper. Mix well until smooth.

          Layer the bake: Start by placing a layer of sliced potatoes on the bottom of the baking dish. Season lightly with salt. Add a layer of the sautéed onions and half of the crispy bacon. Sprinkle a third of the shredded cheddar cheese over the top. Repeat this process for another layer: potatoes, salt, onions, remaining bacon, and another third of the cheese. Finish with a final layer of sliced potatoes on top.

            Add creamy mixture: Pour the sour cream and cream mixture evenly over the layered potatoes, ensuring it seeps through all the layers. Top with the remaining cheddar cheese.
