2 cups cooked chicken, shredded or diced

1 cup long-grain white rice, uncooked

1 can (10.5 oz) cream of chicken soup

1 cup low-sodium chicken broth

1 cup milk

1 cup frozen mixed vegetables (peas, carrots, corn)

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon dried thyme

Salt and pepper to taste

1 cup shredded cheddar cheese

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for another 1-2 minutes until fragrant.

      Combine Ingredients: In a large mixing bowl, combine the cooked chicken, uncooked rice, cream of chicken soup, chicken broth, milk, frozen mixed vegetables, sautéed onions and garlic, paprika, thyme, salt, and pepper. Mix well until everything is evenly combined.

        Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish. Spread it out evenly.

          Add Cheese: Sprinkle the shredded cheddar cheese over the top of the casserole.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes. After 45 minutes, remove the foil and bake for an additional 15-20 minutes, or until the rice is tender and the cheese is bubbly and golden.

              Let It Rest: Once done, remove the casserole from the oven and let it sit for about 10 minutes to set.
