For the Meatloaf:

1 1/2 lbs ground beef (preferably 80% lean)

1 cup breadcrumbs (plain or Italian seasoned)

1/2 cup grated Parmesan cheese

1/2 cup milk

1/4 cup ketchup (plus extra for glaze)

1/4 cup onion, finely chopped

2 cloves garlic, minced

1 large egg

1 tablespoon Worcestershire sauce

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon dried oregano

1 teaspoon dried thyme

For the Mashed Potatoes:

2 lbs Yukon Gold potatoes, peeled and quartered

1/2 cup unsalted butter

1/2 cup milk (or heavy cream for richness)

Salt and pepper to taste

Optional: chopped chives or parsley for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Meatloaf Mixture:

      In a large mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan, milk, ketchup, chopped onion, minced garlic, egg, Worcestershire sauce, salt, pepper, oregano, and thyme. Mix until just combined; avoid overmixing to keep the meatloaf tender.

        Shape the Meatloaf: Transfer the meat mixture to a loaf pan or shape into a loaf on a lined baking sheet. Brush the top with an additional layer of ketchup for a flavorful glaze.

          Bake the Meatloaf: Place the meatloaf in the preheated oven and bake for about 1 hour, or until it reaches an internal temperature of 160°F (70°C). Let it rest for 10 minutes before slicing.

            Prepare the Mashed Potatoes:

              While the meatloaf is baking, bring a large pot of salted water to a boil. Add the quartered Yukon Gold potatoes and cook until fork-tender (about 15-20 minutes).

                Mash the Potatoes: Drain the potatoes and return them to the pot. Add the butter and milk (or heavy cream) to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.

                  Serve and Enjoy: Slice the meatloaf and serve with a generous helping of creamy mashed potatoes. Garnish with chopped chives or parsley if desired.
