1 cup breadcrumbs

1/2 cup onion, finely chopped

1/2 cup green bell pepper, finely chopped

2 cloves garlic, minced

2 large eggs

1/4 cup milk

1/4 cup ketchup (plus extra for glaze)

2 tbsp Worcestershire sauce

1 tsp Italian seasoning

1 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika

For the Mashed Potatoes:

2 lbs russet potatoes, peeled and cubed

1/2 cup milk (or heavy cream for extra creaminess)

1/4 cup unsalted butter

Salt and pepper to taste

Fresh chives or parsley for garnish (optional)

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Prepare the Meatloaf Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, green bell pepper, minced garlic, eggs, milk, ketchup, Worcestershire sauce, Italian seasoning, salt, black pepper, and smoked paprika. Mix until just combined; do not overmix to maintain tenderness.

      Shape and Glaze the Meatloaf: Transfer the meat mixture into a loaf pan (or shape it free-form on a baking sheet). Smooth the top and brush a layer of ketchup over the top for a sweet glaze.

        Bake the Meatloaf: Place the loaf pan (or baking sheet) in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (70°C). Let it rest for a few minutes before slicing.

          Prepare the Mashed Potatoes: While the meatloaf bakes, bring a large pot of salted water to a boil. Add the cubed potatoes and cook until tender, approximately 15-20 minutes.

            Mash Those Spuds: Drain the potatoes and return them to the pot. Add the milk, butter, salt, and pepper. Mash until smooth and creamy. Adjust the seasoning as needed.
