2 lbs baby potatoes (Yukon Gold or red potatoes), halved

6 slices of thick-cut bacon, chopped

1/4 cup honey

3 tbsp olive oil

2 tsp garlic powder

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

1 tbsp fresh rosemary, chopped (or 1 tsp dried rosemary)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Once cooked, remove the bacon using a slotted spoon and let it drain on paper towels. Reserve 2 tbsp of the bacon fat in the skillet.

      Mix Ingredients: In a large mixing bowl, combine the halved potatoes, honey, olive oil, garlic powder, paprika, salt, black pepper, and rosemary. Pour in the reserved bacon fat and toss everything together until the potatoes are evenly coated.

        Add Bacon: Gently fold in the cooked bacon pieces into the potato mixture, ensuring even distribution.

          Roast Potatoes: Spread the potato-bacon mixture onto a baking sheet in a single layer. Roast in the preheated oven for 30-35 minutes, or until the potatoes are golden brown and crispy, stirring halfway through to ensure even cooking.

            Garnish: Once done, remove from the oven and let cool for a few minutes. Garnish with freshly chopped parsley before serving.
