Ingredients

1 pound (450g) baby carrots (washed and peeled if necessary)

3 tablespoons unsalted butter

2 tablespoons honey

3 cloves garlic (minced)

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Optional: chopped parsley for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Carrots: If you're using larger carrots, cut them into evenly sized sticks (about 2-3 inches in length) to ensure even cooking.

Make the Honey Garlic Butter: In a small saucepan over low heat, melt the butter. Once melted, stir in the honey, minced garlic, salt, pepper, and thyme. Mix until well combined and fragrant (about 1-2 minutes). Remove from heat.

Toss the Carrots: In a large mixing bowl, add the baby carrots. Pour the honey garlic butter mixture over the carrots and toss until they are evenly coated.

Roast the Carrots: Spread the coated carrots in a single layer on a baking sheet lined with parchment paper. Ensure they are not overcrowded to allow for even roasting.

Bake to Perfection: Roast in the preheated oven for about 25-30 minutes, tossing halfway through, until the carrots are tender and lightly caramelized.

Garnish and Serve: Once done, remove the carrots from the oven and let them cool for a couple of minutes. Optional: sprinkle with chopped parsley for added freshness. Serve warm as a delightful side dish!
