Honey Garlic Shrimp and Rice Skillet

1 lb large shrimp, peeled and deveined

1 cup jasmine rice

2 cups chicken broth (or vegetable broth for a vegetarian option)

1/4 cup honey

3 tablespoons soy sauce

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame oil

1 tablespoon olive oil

1/2 teaspoon red pepper flakes (optional)

1 cup broccoli florets

1/2 cup snap peas, trimmed

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Rice: In a medium saucepan, combine the jasmine rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and liquid is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

    Make the Sauce: In a small bowl, whisk together honey, soy sauce, minced garlic, grated ginger, and red pepper flakes (if using). Set aside.

      Cook the Shrimp: Heat olive oil and sesame oil in a large skillet over medium-high heat. Add the shrimp to the skillet in a single layer. Cook for about 2-3 minutes per side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add broccoli florets and snap peas. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

          Combine and Finish: Return the cooked shrimp to the skillet. Pour the honey garlic sauce over the shrimp and vegetables. Stir well to coat everything evenly and cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.
