Honey Mustard Chicken Bites

1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1/2 cup honey

1/3 cup Dijon mustard

2 tablespoons apple cider vinegar

2 tablespoons olive oil

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper, to taste

1/4 cup all-purpose flour (for dredging)

1/4 cup breadcrumbs (Panko works best for extra crunch)

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, combine honey, Dijon mustard, apple cider vinegar, olive oil, garlic powder, paprika, salt, and pepper. Add the chicken pieces and toss until they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

    Prepare the Breading Station: In two separate shallow dishes, place the flour in one and breadcrumbs in another. Optionally, you can mix some salt and pepper into the breadcrumbs for added flavor.

      Bread the Chicken: Remove the marinated chicken from the refrigerator. Take each piece out of the marinade, allowing excess marinade to drip off. Dredge each piece in flour, shaking off the excess, then dip them back in the marinade briefly and finally coat them with breadcrumbs, pressing gently to ensure they stick.

        Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

          Bake the Chicken Bites: Arrange the coated chicken bites in a single layer on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the chicken is cooked through and the coating is golden and crispy.
