For the Chicken Marinade:

1 lb (450g) boneless, skinless chicken thighs

1/4 cup honey

1/4 cup Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

For the Sliders:

8 slider buns (preferably Hawaiian or soft brioche)

4 slices of sharp cheddar cheese

1 cup arugula or baby spinach

1/2 cup pickles, sliced

1/4 red onion, thinly sliced

Optional: extra honey and mustard for drizzling

Marinate the Chicken: In a bowl, mix honey, Dijon mustard, apple cider vinegar, garlic powder, onion powder, salt, and pepper. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour (or overnight for the best flavor).

    Cook the Chicken: Preheat your grill or a skillet over medium-high heat. Remove the chicken from the marinade, shaking off excess liquid. Grill or cook the chicken thighs for about 6-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C) and are nicely caramelized. Let them rest for a few minutes before slicing into strips.

      Toast the Buns: While the chicken rests, slice the slider buns in half and toast them lightly on the grill or in a toaster oven until golden brown.

        Assemble the Sliders: On the bottom half of each toasted slider bun, place a few strips of the honey mustard chicken. Top with a slice of cheddar cheese, a handful of arugula (or spinach), a few pickle slices, and a bit of red onion. Drizzle with extra honey and mustard if desired.
