Ingredients

1 cup cooked quinoa (preferably chilled)

1 medium ripe peach, diced (about 1 cup)

2 large eggs, beaten

1/2 cup all-purpose flour (or almond flour for a gluten-free option)

1/3 cup honey (plus extra for drizzling)

1/4 cup finely chopped green onion

1/4 teaspoon cinnamon

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon baking powder

1/4 cup vegetable oil (for frying)

Fresh mint leaves (for garnish, optional)

Instructions

Prepare the Base: In a large mixing bowl, combine the cooked quinoa, diced peach, and chopped green onion. Mix well to incorporate all the flavors.

Mix the Wet Ingredients: In another bowl, whisk together the beaten eggs, honey, cinnamon, salt, black pepper, and baking powder until well blended.

Combine Ingredients: Pour the wet mixture into the quinoa mixture and stir gently. Gradually add the flour, combining until just incorporated. The mixture should be thick and hold together; if it's too wet, add a bit more flour until you reach the right consistency.

Heat the Oil: In a large skillet, heat the vegetable oil over medium heat. You can test if it's ready by dropping a small amount of batter into the oil; it should sizzle immediately.

Form the Fritters: Using a tablespoon or your hands, scoop the quinoa mixture and form small patties (about 2-3 inches in diameter). Make sure they are compact to ensure they hold together while cooking.

Fry the Fritters: Place the fritters in the hot oil, working in batches to avoid overcrowding. Fry for about 3-4 minutes on each side, or until they turn golden brown. Remove and drain on a plate lined with paper towels.

Garnish and Serve: Drizzle with extra honey and garnish with fresh mint leaves if desired. Serve warm and enjoy your delicious Honey Peach Quinoa Fritters!
