1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons honey

3 tablespoons Sriracha sauce (adjust to taste)

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon cornstarch

2 tablespoons vegetable oil (for cooking)

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup broccoli florets

1 cup snap peas

4 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine the honey, Sriracha, soy sauce, rice vinegar, and cornstarch. Add the chicken pieces and mix well to ensure they are thoroughly coated. Marinate for at least 15 minutes, or up to 1 hour in the refrigerator for enhanced flavor.

    Prep the Vegetables: While the chicken is marinating, prepare your vegetables. Slice the red and yellow bell peppers, and wash the broccoli and snap peas. Set aside.

      Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken along with all the marinade. Stir-fry for about 5-7 minutes, or until the chicken is cooked through and has a nice caramelized coating. Remove the chicken from the skillet and set aside.

        Stir Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, and stir-fry for about 30 seconds until fragrant. Then, add the bell peppers, broccoli, and snap peas. Stir-fry for 4-5 minutes, until the vegetables are tender-crisp.

          Combine Chicken and Vegetables: Return the cooked chicken to the skillet with the vegetables. Stir everything together and allow to cook for an additional 2-3 minutes to let the flavors meld together.

            Serve: Remove from heat, garnish with chopped green onions and sesame seeds. Serve hot over rice or noodles of your choice.
