Ingredients

1 cup unsalted butter, softened

1 cup packed brown sugar

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 cup butterscotch chips

1 cup chopped pecans or walnuts (optional)

Sea salt flakes (for topping, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan or line it with parchment paper for easy removal.

Mix the Wet Ingredients: In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar together until the mixture is light and fluffy. This should take about 3-4 minutes using an electric mixer.

Add Eggs and Vanilla: Add the eggs one by one, mixing well after each addition. Then, stir in the vanilla extract. Continue to mix until everything is well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.

Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid over-mixing.

Add Butterscotch Chips and Nuts: Gently fold in the butterscotch chips and chopped pecans or walnuts, if using.

Spread and Bake: Pour the batter into the prepared baking pan, spreading it evenly. Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.

Cool and Cut: Allow the bars to cool in the pan for about 10-15 minutes, then sprinkle with sea salt flakes. Lift the bars out using the parchment paper (if used) and let them cool completely on a wire rack before cutting into squares.

Serve and Enjoy: Serve these blissful butterscotch bars at room temperature for the best flavor. They can be stored in an airtight container for up to a week, though we doubt they'll last that long!
