Ingredients

2 medium zucchinis, sliced into half-moons

1 tablespoon vegetable oil

1 tablespoon unsalted butter

2 cloves garlic, minced

1 tablespoon soy sauce

1 teaspoon sesame oil

1 tablespoon rice vinegar

1 teaspoon sugar

Salt and pepper to taste

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions

Prepare the Zucchini: Wash the zucchinis and slice them into half-moons about ½ inch thick. Set aside.

Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

Add Butter and Garlic: Add the butter and minced garlic into the hot oil. Sauté for about 30 seconds, allowing the garlic to become fragrant but not browned.

Cook the Zucchini: Add the zucchini slices to the skillet. Stir-fry for about 3-5 minutes, or until the zucchini is tender but still crisp.

Flavor the Zucchini: In a small bowl, mix together the soy sauce, sesame oil, rice vinegar, and sugar. Pour this sauce over the sautéed zucchini. Toss well to coat and let it simmer for an additional 2 minutes, adjusting seasoning with salt and pepper if necessary.

Add Garnishes: Remove the skillet from heat. Sprinkle the dish with chopped green onions and sesame seeds for garnish.

Serve: Plate the hibachi zucchini immediately while hot, either as a side dish or a main vegetarian option.
