For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon ground cinnamon (optional)

For the filling:

2 large egg yolks

1 can (14 oz) sweetened condensed milk

½ cup fresh key lime juice (or regular lime juice if key limes are unavailable)

1 tablespoon lime zest

½ teaspoon vanilla extract

For the topping:

1 cup heavy whipping cream

2 tablespoons powdered sugar

Lime wedges and zest for garnish (optional)

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium mixing bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and ground cinnamon (if using). Mix until well combined.

        - Press the mixture evenly into the bottom of a greased 9x9-inch baking dish. Bake for 8–10 minutes until lightly golden. Remove from the oven and let cool slightly.

          Make the Filling:

            - In a bowl, whisk the egg yolks until they are light and frothy.

              - Add the sweetened condensed milk, key lime juice, lime zest, and vanilla extract to the bowl. Whisk together until smooth and fully combined.

                - Pour the filling over the baked crust, spreading it into an even layer.

                  Bake the Bars:

                    - Return the baking dish to the oven and bake for 15–20 minutes, or until the filling is just set (it should have a slight jiggle).

                      - Remove from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 2 hours to allow the bars to firm up.

                        Prepare the Topping:

                          - In a chilled mixing bowl, use an electric mixer to beat the heavy whipping cream until soft peaks form. Gradually add in powdered sugar and continue to beat until stiff peaks form.

                            Serve the Bars:

                              - Once your bars are chilled and set, cut them into squares. Top each square with a dollop of whipped cream and garnish with lime wedges and zest if desired.
