2 large flour tortillas

1 cup cooked chicken, shredded (rotisserie chicken works great!)

1 cup shredded cheese (cheddar or Monterey Jack)

1/2 cup bell pepper, finely chopped (any color)

1/2 cup zucchini, grated

1/4 cup corn (canned or frozen)

1/4 cup black beans (rinsed and drained)

1 tbsp olive oil

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper, to taste

Optional: sour cream and salsa for serving

Instructions
 

Preheat the Pan: Heat a large skillet over medium heat and add olive oil.

    Prepare the Chicken Mixture: In a bowl, combine the shredded chicken, chopped bell pepper, grated zucchini, corn, black beans, garlic powder, onion powder, salt, and pepper. Mix until well combined.

      Assemble the Quesadilla: Place one tortilla in the skillet. Sprinkle half of the shredded cheese evenly over the tortilla. Spread the chicken and veggie mixture on top of the cheese. Add the remaining cheese over the mixture, and then place the second tortilla on top.

        Cook the Quesadilla: Cook for about 3-4 minutes, or until the bottom tortilla is golden brown and the cheese is starting to melt. Carefully flip the quesadilla using a large spatula. Cook for an additional 3-4 minutes on the other side until it is golden and crispy.

          Slice and Serve: Remove from skillet and let it cool slightly. Cut the quesadilla into wedges. Serve with sour cream and salsa for dipping if desired.
