Ingredients

For the Sloppy Joes:

1 lb ground beef or turkey

1 cup finely chopped onion

1 cup finely chopped bell pepper (any color)

2 cloves garlic, minced

1 cup ketchup

2 tablespoons Worcestershire sauce

1 tablespoon brown sugar

1 teaspoon mustard (yellow or Dijon)

1 teaspoon smoked paprika

Salt and pepper to taste

4 whole grain hamburger buns

Optional: shredded cheese for topping

For the Sweet Potato Fries:

2 medium sweet potatoes, peeled and cut into fry shapes

2 tablespoons olive oil

1 teaspoon paprika

1/2 teaspoon garlic powder

Salt and pepper to taste

Optional: parsley for garnish

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) for the sweet potato fries.

Prepare the Sweet Potatoes: In a large bowl, toss the cut sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper until well coated. Spread them out in a single layer on a baking sheet lined with parchment paper.

Bake the Fries: Place the baking sheet in the preheated oven and bake for 20-25 minutes, flipping halfway through, until the fries are crispy and golden brown.

Cook the Meat Mixture: While the fries are baking, heat a large skillet over medium heat. Add the ground meat and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.

Add Vegetables: Add the chopped onion, bell pepper, and minced garlic to the skillet. Sauté for about 5-6 minutes, or until the vegetables are soft and the onions are translucent.

Mix in the Sauce: Stir in ketchup, Worcestershire sauce, brown sugar, mustard, smoked paprika, salt, and pepper. Reduce the heat to low, letting the mixture simmer for about 5-7 minutes, stirring occasionally until heated through.

Toast the Buns (optional): If you like toasted buns, split the whole grain hamburger buns and lightly toast them on a separate skillet or in a toaster.

Assemble the Sloppy Joes: Scoop the sloppy joe mixture onto the toasted buns. If desired, sprinkle shredded cheese on top.

Serve with Sweet Potato Fries: Remove the sweet potato fries from the oven and let them cool for a moment. Serve the Sloppy Joes alongside the sweet potato fries, garnished with fresh parsley if you like.
