1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 cup corn, frozen or canned

2 cups cooked rotisserie chicken, shredded

8 small flour tortillas

1 cup shredded cheese (cheddar or Mexican blend)

1 cup enchilada sauce (store-bought or homemade)

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

Fresh cilantro, chopped (for garnish)

Sour cream (for serving, optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Mix the Filling: In a large bowl, combine the black beans, diced tomatoes with green chilies, corn, shredded chicken, ground cumin, garlic powder, and onion powder. Mix well until all ingredients are evenly combined.

      Assemble the Enchiladas: Spread a thin layer of enchilada sauce at the bottom of a 9x13 inch baking dish. Take a flour tortilla, add a generous scoop of the chicken and bean mixture in the center, sprinkle some shredded cheese on top, then roll it up and place it seam-side down in the baking dish. Repeat this for all tortillas.

        Top with Sauce and Cheese: Once all tortillas are in the baking dish, pour the remaining enchilada sauce evenly over the top. Sprinkle the rest of the shredded cheese over the sauce.

          Bake: Cover the baking dish with aluminum foil (shiny side down to prevent sticking) and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for another 10-15 minutes, or until the cheese is bubbly and golden.

            Serve: Remove the enchiladas from the oven and let them cool for a few minutes. Garnish with freshly chopped cilantro, and serve with a dollop of sour cream if desired.
