Ingredients

1 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 large egg

3/4 cup buttermilk (or substitute with milk + 1 tablespoon lemon juice)

2 tablespoons unsalted butter, melted

Zest of 1 lemon

1 cup fresh blueberries (you can also use frozen, but thaw and drain excess liquid)

Cooking spray or additional butter for greasing the pan

Optional: Maple syrup or lemon juice for serving

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a mini muffin tin by greasing it with cooking spray or butter.

Whisk Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Mix Wet Ingredients: In a separate bowl, beat the egg and then add the buttermilk, melted butter, and lemon zest. Mix until everything is combined.

Combine Mixtures: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. It’s okay if there are a few lumps; do not overmix.

Incorporate Blueberries: Gently fold in the fresh blueberries, ensuring they’re evenly distributed throughout the batter.

Fill the Muffin Tin: Spoon the pancake batter into each mini muffin cup, filling them about 2/3 full to allow for rising.

Bake: Bake in the preheated oven for about 12-15 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.

Cool: Remove the pancake bites from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack.

Serve: Serve warm with a drizzle of maple syrup or a squeeze of fresh lemon juice for an extra zing.
