Ingredients

4 boneless, skinless chicken breasts

Salt and freshly ground black pepper, to taste

½ cup all-purpose flour (for dredging)

4 tablespoons unsalted butter

2 tablespoons olive oil

4 cloves garlic, minced

½ cup dry white wine (e.g., Sauvignon Blanc)

1 cup low-sodium chicken broth

2 tablespoons capers, rinsed and drained

Juice of 1 large lemon (about 3 tablespoons)

Zest of 1 lemon

Fresh parsley, chopped (for garnish)

Lemon slices (for garnish)

Instructions

Prepare the Chicken: Begin by placing the chicken breasts between two pieces of plastic wrap. Use a meat mallet or rolling pin to pound them to an even thickness, about ½ inch. Season both sides with salt and pepper.

Dredge the Chicken: Spread the flour on a plate and dredge each chicken breast in the flour, shaking off any excess. This will create a nice crust during cooking.

Heat the Pan: In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat until the butter is melted and starts to bubble.

Cook the Chicken: Add the chicken breasts to the skillet in a single layer. Cook for about 4-5 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and transfer to a plate; cover loosely with foil to keep warm.

Make the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Carefully pour in the white wine to deglaze the skillet, using a wooden spoon to scrape up any browned bits from the bottom. Let it simmer for 2 minutes.

Add Broth and Capers: Add the chicken broth, capers, lemon juice, and lemon zest. Bring the mixture to a boil, then reduce heat to a simmer, allowing it to cook for another 3-4 minutes to reduce slightly.

Finish the Sauce: Stir in the remaining 2 tablespoons of butter until melted. Taste and adjust seasoning with salt and pepper if necessary.

Combine Chicken and Sauce: Return the chicken to the skillet, allowing it to heat through and soak up some of the sauce for about a minute.

Serve: Plate the chicken and spoon the zesty sauce over the top. Garnish with chopped parsley and lemon slices.
