Lemon Butter Orzo with Asparagus

1 cup orzo pasta

1 bunch asparagus (approximately 12-15 spears), trimmed and cut into 2-inch pieces

3 tablespoons unsalted butter

Zest of 1 lemon

2 tablespoons freshly squeezed lemon juice

1 cup vegetable or chicken broth

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Orzo: In a large pot of salted boiling water, add the orzo and cook according to package instructions until al dente. Drain the orzo and set aside.

    Sauté Asparagus: In the same pot, melt 1 tablespoon of butter over medium heat. Add the asparagus pieces and sauté for about 4-5 minutes, until they are bright green and tender-crisp. Season with salt and pepper. Remove the asparagus from the pot and set aside.

      Prepare the Lemon Butter Sauce: In the same pot, add the remaining 2 tablespoons of butter and garlic. Sauté for about 1 minute, until the garlic is fragrant but not browned. Stir in the vegetable/chicken broth, lemon zest, and lemon juice. Bring to a simmer.

        Combine Ingredients: Add the drained orzo back to the pot, along with the sautéed asparagus. Stir gently to combine. Sprinkle in the grated Parmesan cheese and red pepper flakes (if using). Stir until everything is well-coated in the lemon butter sauce.

          Season to Taste: Taste and adjust seasoning, adding more salt, pepper, or lemon juice if desired.
