Lemon Coconut Energy Balls

1 cup rolled oats

1 cup unsweetened shredded coconut

1/2 cup almond flour

1/3 cup honey or maple syrup (for a vegan option)

Zest of 2 lemons

1/4 cup fresh lemon juice

1/4 cup almond butter (or any nut/seed butter of choice)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

Optional: 1/4 cup mini dark chocolate chips or dried fruit (like cranberries or apricots)

Instructions
 

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, almond flour, and sea salt. Stir well to ensure all dry ingredients are evenly mixed.

    Combine Wet Ingredients: In a separate bowl, whisk together the honey (or maple syrup), lemon zest, lemon juice, almond butter, and vanilla extract. Mix until you achieve a smooth and consistent texture.

      Combine Mixtures: Pour the wet mixture into the dry ingredient bowl. Stir until all the dry ingredients are fully incorporated with the wet. If using, fold in mini dark chocolate chips or dried fruit at this stage for added flavor.

        Chill the Mixture: Cover the bowl with plastic wrap or a lid and let it chill in the refrigerator for about 30 minutes. This will make the mixture easier to shape into balls.

          Form Energy Balls: Once chilled, remove the mixture from the fridge. Use your hands to shape small portions of the mixture into balls about 1 inch in diameter. Place each ball on a parchment-lined baking sheet.
