Lemon Dill Swirl Pitas

2 cups all-purpose flour

1 cup whole wheat flour

1 pack (2 1/4 teaspoons) instant yeast

1 teaspoon salt

1 tablespoon sugar

1 cup warm water (about 110°F)

3 tablespoons olive oil

Zest of 1 lemon

1 teaspoon garlic powder

1/4 cup fresh dill, finely chopped

1/4 cup crumbled feta cheese

1/4 cup Greek yogurt (for serving)

Lemon wedges (for serving)

Instructions
 

Prepare the Dough:

    In a large mixing bowl, combine the all-purpose flour, whole wheat flour, instant yeast, salt, and sugar. Mix well to ensure even distribution of ingredients.

      Incorporate Wet Ingredients:

        Add the warm water and olive oil to the dry mixture. Mix until a shaggy dough forms. Add the lemon zest and garlic powder before kneading the dough on a floured surface for about 5-7 minutes, until smooth and elastic.

          First Rise:

            Place the dough in an oiled bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

              Prepare the Filling:

                While the dough is rising, mix the fresh dill and crumbled feta cheese in a small bowl. Set aside.

                  Shape the Pitas:

                    After the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a small ball and then flatten it into a disc about 6 inches in diameter.

                      Add the Filling:

                        Place a small amount of the dill-feta mixture in the center of each disc. Fold the edges over to enclose the filling and pinch them closed. Gently roll the filled dough balls back into a smooth disc shape, ensuring the filling is properly sealed inside.

                          Second Rise:

                            Cover the filled discs with a cloth and let them rise for about 30 minutes, or until slightly puffed up.

                              Cook the Pitas:

                                Preheat a skillet or griddle over medium-high heat. Once hot, cook each pita for about 3 minutes on one side until puffed and golden. Flip and cook for an additional 2-3 minutes on the other side. Remove from heat and keep warm under a clean kitchen towel.

                                  Serve:

                                    Serve the Lemon Dill Swirl Pitas warm with a side of Greek yogurt and lemon wedges for squeezing over the top.
