Ingredients

1 lb (450g) fresh green beans, trimmed

3 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

1 tablespoon grated Parmesan cheese (optional)

Instructions

Prepare the Beans: Bring a large pot of salted water to a boil. Add the trimmed green beans and blanch them for about 3-4 minutes until they are bright green and crisp-tender. Drain and immediately transfer them to a bowl of ice water to halt the cooking process. This will help retain their vibrant color and crunch.

Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned. Be careful not to burn the garlic as it can turn bitter.

Combine Beans and Seasoning: Once the garlic is ready, add the blanched green beans to the skillet. Toss them to coat thoroughly in the garlic oil. Add the lemon zest, lemon juice, red pepper flakes, salt, and pepper. Stir well and sauté for an additional 2-3 minutes, allowing the green beans to absorb the flavors.

Finishing Touches: Remove the skillet from heat. If desired, sprinkle freshly chopped parsley and grated Parmesan cheese over the beans for an added layer of flavor.

Serve: Transfer the lemon-garlic beans to a serving platter or individual plates. Enjoy them warm as a vibrant side dish or a refreshing addition to a salad!
