Lemon Garlic Roasted Chicken Thighs

4 bone-in, skin-on chicken thighs

4 cloves garlic, minced

1 large lemon (zest and juice)

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

½ teaspoon salt

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prepare Marinade: In a medium bowl, combine minced garlic, lemon juice, lemon zest, olive oil, dried oregano, fresh rosemary, salt, and black pepper. Whisk until well blended.

      Marinate Chicken: Pat the chicken thighs dry with paper towels. Place them in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure to coat each piece well. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or ideally, up to 2 hours for deeper flavor.

        Arrange for Roasting: Once marinated, remove the chicken thighs from the refrigerator. Place them skin-side-up in a baking dish or on a lined baking sheet. Pour any leftover marinade over the chicken.

          Roast Chicken: Roast the chicken in the preheated oven for 35-45 minutes, or until the skin is crispy and golden, and the internal temperature reaches 165°F (74°C). If the skin isn't crispy enough, you can broil them for the last 2-3 minutes.

            Rest Before Serving: Remove from the oven and let the chicken thighs rest for about 5 minutes. This allows the juices to redistribute.
