Lemon Garlic Roasted Chickpeas

2 cups canned chickpeas (or 1 cup dried chickpeas, soaked and cooked)

2 tablespoons olive oil

Zest of 1 lemon

Juice of 1 lemon

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

½ teaspoon salt

¼ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Optional: a pinch of cayenne pepper for heat

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Chickpeas: If using canned chickpeas, drain and rinse them thoroughly in cold water. Pat them dry with a clean kitchen towel to remove excess moisture. If you’re using dried chickpeas, ensure they have been soaked and boiled until tender, then dry them well.

      Season Chickpeas: In a large mixing bowl, combine the chickpeas with olive oil, lemon zest, lemon juice, minced garlic, smoked paprika, cumin, salt, black pepper, and cayenne pepper (if using). Toss well to ensure the chickpeas are evenly coated with the seasoning mixture.

        Roast Chickpeas: Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper. Make sure there’s some space between each chickpea to ensure even roasting.

          Bake: Roast in the preheated oven for 25-30 minutes, shaking the pan halfway through to promote even cooking. Bake until the chickpeas are golden brown and crispy, but be careful not to burn them.

            Cool and Garnish: Once roasted, remove the chickpeas from the oven and allow them to cool for a few minutes on the baking sheet. They will continue to get crunchier as they cool down.
