4 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 large lemon

Juice of 1 large lemon

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

    Prepare the Potatoes: Wash the baby potatoes thoroughly and cut them in half (or quarters if they are larger).
