Lemon Garlic Roasted Potatoes and Green Beans

1.5 lbs baby potatoes, halved

8 oz fresh green beans, trimmed

4 cloves garlic, minced

1 lemon, zested and juiced

3 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: In a large mixing bowl, combine the halved baby potatoes, minced garlic, lemon zest, lemon juice, olive oil, dried thyme, paprika, salt, and pepper. Toss until the potatoes are evenly coated.

      Roast the Potatoes: Spread the potatoes in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25 minutes, or until they are tender and golden brown.

        Prepare the Green Beans: While the potatoes are roasting, in the same bowl (no need to wash), add the trimmed green beans. Drizzle with a bit more olive oil, salt, and pepper. Toss to combine.

          Add Green Beans to the Oven: After the potatoes have roasted for 25 minutes, remove the baking sheet from the oven and add the green beans alongside the potatoes. Toss lightly to combine, and return the baking sheet to the oven.

            Continue Roasting: Roast for an additional 15-20 minutes, or until the green beans are bright and tender-crisp and the potatoes are fully cooked.

              Serve: Once roasted, remove from the oven and let it cool for a couple of minutes. Transfer to a serving dish and garnish with fresh parsley before serving.
