1 pound large shrimp, peeled and deveined

8 oz linguine or spaghetti

4 tablespoons unsalted butter

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

Zest of 1 lemon

Juice of 2 lemons

1/2 cup dry white wine (such as Sauvignon Blanc)

1/2 cup low-sodium chicken broth

Salt and pepper to taste

1/4 cup fresh parsley, chopped

Grated Parmesan cheese for serving (optional)

Instructions
 

Cook the Pasta: Begin by boiling a large pot of salted water. Cook the linguine or spaghetti according to package instructions until al dente. Reserve about 1 cup of pasta water before draining, then set aside.

    Sauté Shrimp: In a large skillet over medium-high heat, add 2 tablespoons of olive oil and 2 tablespoons of butter. Once the butter is melted and bubbling, add the minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant.

      Add Shrimp: Toss in the shrimp, seasoning them with salt and pepper. Cook for about 2-3 minutes on one side, then flip and cook for another 2-3 minutes until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

        Prepare the Sauce: In the same skillet, add the remaining 1 tablespoon of olive oil, and pour in the white wine, scraping any browned bits from the bottom of the pan. Allow it to simmer for about 2 minutes to reduce slightly.

          Mix in Broth and Lemon: Stir in the chicken broth, lemon zest, and lemon juice. Let the mixture simmer for another 2-3 minutes, allowing it to thicken slightly. Taste and adjust seasoning with salt and pepper as needed.

            Combine Pasta and Shrimp: Add the drained pasta to the skillet, along with the cooked shrimp. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauciness.

              Finish: Remove the skillet from heat and stir in the remaining 2 tablespoons of butter and chopped parsley until well combined.
