Ingredients

8 oz (about 225 g) spaghetti or your favorite pasta

1 can (5 oz) tuna in olive oil, drained and flaked

3 tablespoons extra virgin olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust according to heat preference)

Zest of 1 lemon

Juice of 1 lemon

Salt and black pepper, to taste

1 cup cherry tomatoes, halved

1/2 cup fresh parsley, chopped

Grated Parmesan cheese, for serving

Lemon wedges, for garnish

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.

Prepare the Sauce: In a large skillet over medium heat, add the olive oil. When warmed, add the minced garlic and red pepper flakes, sautéing for about 1-2 minutes until the garlic is fragrant but not browned.

Combine Tuna and Tomatoes: Stir in the flaked tuna and cherry tomatoes. Cook for an additional 3-4 minutes, allowing the tomatoes to soften slightly.

Add Flavorings: Add the lemon zest, lemon juice, salt, and pepper to the skillet, mixing well to combine. If the mixture looks too dry, gradually add some reserved pasta water to reach your desired consistency.

Toss with Pasta: Add the cooked spaghetti to the skillet and gently toss everything together, ensuring the pasta is well coated in the sauce.

Finishing Touches: Stir in the chopped parsley and adjust seasoning with more salt, pepper, and lemon juice, if needed.

Serve: Plate the pasta in bowls, topping each serving with grated Parmesan cheese and a lemon wedge for extra zest. Garnish with additional parsley if desired.
