Lemon Herb Chicken Sliders

1 pound ground chicken

1 tablespoon olive oil

2 cloves garlic, minced

Zest and juice of 1 lemon

2 teaspoons fresh thyme, chopped (or 1 teaspoon dried thyme)

2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried rosemary)

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

½ cup breadcrumbs

4 small slider buns

Fresh arugula or spinach for topping

Sliced tomato (optional)

Sliced red onion (optional)

Mayonnaise or aioli for spreading

Instructions
 

In a large mixing bowl, combine the ground chicken, olive oil, minced garlic, lemon zest, lemon juice, thyme, rosemary, oregano, salt, and pepper. Mix until just combined, being careful not to overwork the chicken.

    Add the breadcrumbs to the chicken mixture and mix gently to incorporate. The breadcrumbs will help bind the sliders and add texture.

      Preheat your grill or a non-stick skillet over medium heat. While it heats, form the chicken mixture into small patties, about 3-4 inches in diameter.

        Lightly grease the grill or skillet with a small amount of olive oil. Cook the chicken patties for about 5-6 minutes per side, or until they are fully cooked through and have an internal temperature of 165°F (74°C).

          During the last minute of cooking, place the slider buns face down on the grill or skillet to toast slightly.

            Assemble the sliders by spreading a layer of mayonnaise or aioli on each toasted bun. Place a chicken patty on the bottom half, followed by fresh arugula or spinach, and optional tomato and onion slices. Top with the other half of the bun.

              Serve immediately with a side of sweet potato fries or a refreshing salad.
