Ingredients

4 bone-in, skin-on chicken thighs

3 tablespoons olive oil

1 tablespoon fresh lemon juice (about 1/2 lemon)

Zest of 1 lemon

4 cloves of garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 tsp dried)

1 tablespoon fresh thyme, chopped (or 1 tsp dried)

1 teaspoon sea salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

Lemon wedges and fresh herbs for garnish

Instructions

Prepare the Marinade: In a bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, sea salt, black pepper, and smoked paprika. Whisk until well blended.

Marinate the Chicken: Place the chicken thighs in a resealable plastic bag or a deep dish. Pour the marinade over the chicken, ensuring all pieces are coated well. Seal the bag or cover the dish, then marinate in the refrigerator for at least 1 hour (or up to 8 hours for more flavor).

Preheat the Oven: Preheat your oven to 425°F (220°C).

Arrange Chicken on Baking Sheet: Line a baking sheet with aluminum foil or parchment paper for easy cleanup. Remove the chicken from the marinade, letting any excess drip off, and place the thighs skin-side up on the baking sheet.

Bake the Chicken: Bake the chicken thighs in the preheated oven for 35-40 minutes, or until the skin is crispy and the internal temperature reaches 165°F (75°C). If desired, broil for an additional 2-3 minutes at the end to further crisp the skin.

Rest and Serve: Once cooked, remove the chicken from the oven and let it rest for 5 minutes. This helps the juices redistribute for a moist bite. Serve with lemon wedges and garnish with fresh herbs.
