1 cup all-purpose flour

1/2 cup almond flour

1/4 cup chia seeds

1/4 cup poppy seeds

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup granulated sugar

1/4 cup light brown sugar

1/2 cup vegetable oil or melted coconut oil

2 large eggs

1 teaspoon vanilla extract

1/2 cup Greek yogurt

Zest of 2 large lemons

1/4 cup fresh lemon juice

1/4 cup milk (you can use non-dairy milk if preferred)

Preheat Oven: Preheat your oven to 350°F (175°C). Grease or line a mini loaf pan with parchment paper.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, almond flour, chia seeds, poppy seeds, baking powder, baking soda, and salt until well combined.
