Ingredients

For the Donuts:

1 cup all-purpose flour

1/2 cup almond flour

1/4 cup granulated sugar

1 tablespoon poppy seeds

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup buttermilk (or yogurt)

1/4 cup vegetable oil

1 large egg

Zest of 1 lemon

1 teaspoon vanilla extract

For the Glaze:

1 cup powdered sugar

2 tablespoons fresh lemon juice

1 teaspoon lemon zest

1 tablespoon milk (optional, for consistency)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a donut pan with non-stick spray or lightly oil it.

Mix the Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, almond flour, granulated sugar, poppy seeds, baking powder, baking soda, and salt until well combined.

Combine Wet Ingredients: In another bowl, whisk together the buttermilk, vegetable oil, egg, lemon zest, and vanilla extract until smooth and thoroughly mixed.

Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to over-mix; a few lumps are okay.

Fill the Donut Pan: Using a piping bag or a zip-top bag (with a corner snipped off), fill the prepared donut pan with the batter, filling each cavity about 2/3 full.

Bake the Donuts: Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center of a donut comes out clean. The edges should be lightly golden.

Cool the Donuts: Allow the donuts to cool in the pan for about 5 minutes, then gently remove them and transfer to a wire rack to cool completely.

Prepare the Glaze: While the donuts cool, make the glaze by whisking together the powdered sugar, fresh lemon juice, lemon zest, and milk (if needed for a smoother consistency) in a small bowl until smooth and shiny.

Glaze the Donuts: Once the donuts are completely cooled, dip the tops of the donuts into the glaze or use a spoon to drizzle the glaze over them. Allow them to set for a few minutes.

Serve and Enjoy: Once the glaze has set slightly, serve the donuts fresh, or store them in an airtight container at room temperature for up to 2 days.
