1 cup fresh raspberries

1 cup granulated sugar

1 cup freshly squeezed lemon juice (about 4-5 lemons)

Zest of 2 lemons

2 cups heavy cream

1 cup whole milk

1 teaspoon vanilla extract

Prepare the Raspberries: In a medium saucepan over medium heat, combine the raspberries and 1/2 cup of the sugar. Cook for about 5-7 minutes, mashing the raspberries gently until they release their juices. Remove from heat and strain through a fine mesh sieve to remove seeds. Set aside to cool.

    Mix the Base: In a large mixing bowl, whisk together the remaining 1/2 cup of sugar, lemon juice, lemon zest, heavy cream, whole milk, vanilla extract, and a pinch of salt until the sugar is fully dissolved.

      Combine the Mixtures: Once the raspberry puree has cooled, gently fold it into the lemon cream mixture. Purée lightly, leaving some swirls of raspberry throughout for a marbled effect.
