12 oz (340g) pasta (fettuccine or spaghetti)

1 cup ricotta cheese

Zest and juice of 1 large lemon

2 tablespoons extra virgin olive oil

2 cups fresh arugula

1/2 cup grated Parmesan cheese, plus more for serving

1 clove garlic, finely minced

Salt and freshly cracked black pepper to taste

Pinch of red pepper flakes (optional)

Fresh basil leaves, for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve about 1 cup of pasta water before draining. Set aside.

    Prepare the Ricotta Mixture: In a large mixing bowl, combine the ricotta cheese, lemon zest, lemon juice, and olive oil. Stir until well combined.

      Sauté the Garlic: In a medium skillet, heat a drizzle of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
