1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and pepper, to taste

Juice of 1 lemon (about 3 tablespoons)

1 teaspoon lemon zest

4 large whole wheat or spinach tortillas

1 cup baby spinach

1 medium cucumber, sliced

1 ripe avocado, sliced

1/2 cup cherry tomatoes, halved

1/4 cup tahini

2 tablespoons water (to thin the tahini)

Fresh parsley or cilantro, for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Chickpeas: In a mixing bowl, combine the drained chickpeas, olive oil, smoked paprika, garlic powder, cumin, salt, and pepper. Toss until all chickpeas are well-coated.
