Ingredients

1 cup of vanilla wafer crumbs

1 cup of powdered sugar

1/2 cup of cream cheese, softened

Zest of 1 large lemon

2 tablespoons of fresh lemon juice

1 teaspoon of vanilla extract

1/4 teaspoon of salt

1 cup of white chocolate chips

Optional: Extra powdered sugar or shredded coconut for rolling

Instructions

Prepare the Base: In a large mixing bowl, combine the vanilla wafer crumbs, powdered sugar, softened cream cheese, lemon zest, lemon juice, vanilla extract, and salt. Mix thoroughly until the ingredients are well incorporated and form a uniform mixture.

Chill the Mixture: Cover the bowl with plastic wrap and refrigerate the mixture for about 30 minutes or until it's firm enough to handle.

Shape the Truffles: Once the mixture is chilled, scoop out small portions using a tablespoon or melon baller. Roll them into balls between your palms, about 1 inch in diameter.

Melt the Chocolate: In a microwave-safe bowl, melt the white chocolate chips in 15-second intervals, stirring in between, until smooth and creamy. Be careful not to overheat.

Coat the Truffles: Dip each rolled truffle into the melted white chocolate, ensuring they are fully coated. Use a fork to remove them from the chocolate, allowing excess to drip off.

Add Finishing Touches: While the chocolate is still wet, you can roll the truffles in extra powdered sugar or shredded coconut for an added flair and flavor.

Set the Truffles: Place the coated truffles on a parchment-lined baking sheet. Once all truffles are coated, refrigerate them for 20 minutes to set the chocolate.

Serve and Enjoy: Serve chilled and indulge in the delightful zesty flavor of these lemon truffles at your next gathering or as a special treat!
