Lentil Tacos with Avocado Crema

For the Lentil Filling:

1 cup green or brown lentils, rinsed and drained

2 cups vegetable broth

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon lime juice

Fresh cilantro, for garnish

For the Avocado Crema:

1 ripe avocado

½ cup Greek yogurt or sour cream

2 tablespoons lime juice

1 small garlic clove

A pinch of salt

Water, as needed for desired consistency

For Serving:

Small corn or flour tortillas

Shredded lettuce

Diced tomatoes

Sliced jalapeños (optional)

Crumbled feta cheese (optional)

Instructions
 

Cook the lentils: In a medium saucepan, combine rinsed lentils and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 20–25 minutes, or until lentils are tender but not mushy. Drain any excess liquid.

    Sauté the vegetables: While the lentils are cooking, heat olive oil in a large skillet over medium heat. Add onions and garlic, and sauté for about 2–3 minutes until translucent. Stir in the diced red bell pepper, chili powder, cumin, smoked paprika, salt, and pepper. Cook for an additional 5 minutes, mixing well.

      Combine lentils and spices: Once the lentils are cooked, add them to the skillet with the sautéed vegetables. Stir in lime juice and cook for another 2–3 minutes to allow the flavors to meld. Remove from heat.

        Prepare the avocado crema: In a food processor or blender, combine the ripe avocado, Greek yogurt (or sour cream), lime juice, garlic, and a pinch of salt. Blend until smooth, adding water as needed to achieve your desired consistency.

          Assemble the tacos: Warm the tortillas in a skillet or microwave. Fill each tortilla with a generous scoop of the lentil filling, then drizzle with avocado crema. Top with shredded lettuce, diced tomatoes, jalapeños, and crumbled feta cheese as desired.
