Light Citrus Quinoa Salad

Ingredients
  

1 cup quinoa, rinsed and drained

2 cups vegetable broth or water

1 medium orange, segmented and diced

1 medium grapefruit, segmented and diced

1/2 cup pomegranate seeds

1/4 cup finely chopped red onion

1/2 cup cucumber, diced

1/4 cup fresh cilantro, chopped

1/4 cup extra virgin olive oil

Juice of 1 lemon

Zest of 1 lime

Salt and pepper to taste

Instructions
 

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth (or water). Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it cool.

    Prepare the Citrus: While the quinoa is cooling, segment and dice the orange and grapefruit. Make sure to remove any seeds and peel.

      Chop Ingredients: In a large mixing bowl, combine the diced orange, grapefruit, pomegranate seeds, red onion, cucumber, and cilantro.

        Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, lime zest, salt, and pepper. Adjust the seasoning to taste.

          Combine: Once the quinoa has cooled, add it to the bowl with the chopped ingredients. Pour the dressing over the salad and gently toss everything together until well combined.

            Chill & Serve: Let the salad sit for at least 15 minutes to allow the flavors to meld. Serve chilled or at room temperature, garnished with extra pomegranate seeds or cilantro if desired.
