4 medium-sized russet potatoes

1 tbsp olive oil

1 tsp sea salt

1 cup shredded sharp cheddar cheese

1 cup crumbled bacon (or veggie bacon)

1 cup sour cream (or Greek yogurt)

1 cup green onions, chopped

1 jalapeño, sliced (optional)

1 cup diced tomatoes

½ cup black olives, sliced

1 tsp smoked paprika

½ tsp garlic powder

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Scrub the russet potatoes under cold water. Pat them dry, then poke several holes in each potato with a fork. Rub each potato with olive oil and sprinkle with sea salt.

      Bake the Potatoes: Place the potatoes directly on the oven rack or on a baking sheet. Bake for about 45-60 minutes, or until fork-tender. Remove from the oven and let cool slightly.

        Prepare the Nacho Base: Once cool enough to handle, cut each potato in half lengthwise. Carefully scoop out a small portion of the potato flesh, leaving enough to keep the skin sturdy.

          Season the Potato Skins: In a bowl, mix the scooped potato flesh with garlic powder, smoked paprika, and half of the cheddar cheese. Spoon this mixture back into the potato skins.

            Layer the Toppings: Preheat your broiler to high. Arrange the stuffed potato halves on a baking sheet. Top each half with the remaining cheddar cheese, crumbled bacon, diced tomatoes, and sliced olives.

              Broil the Nachos: Place the baking sheet under the broiler for about 2-4 minutes, or until the cheese is melted and bubbly. Keep an eye on them to prevent burning.
