Loaded Broccoli Cheddar Stuffed Potatoes

Ingredients
  

4 large russet potatoes

2 cups fresh broccoli florets, chopped

1 cup sharp cheddar cheese, shredded

1/2 cup cream cheese, softened

1/4 cup sour cream

1/4 cup milk

4 green onions, sliced (plus extra for garnish)

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

Optional toppings: crispy bacon bits, extra cheese, red pepper flakes

Instructions
 

Prepare the Potatoes:

    - Preheat your oven to 400°F (200°C).

      - Scrub the russet potatoes under running water, then prick them all over with a fork. Rub each potato with olive oil and sprinkle with salt. Place them directly on the oven rack and bake for about 45-60 minutes, or until tender.

        Steam the Broccoli:

          - While the potatoes are baking, bring a small pot of water to a boil and set a steamer basket over it. Add the chopped broccoli florets and steam for about 5-7 minutes until bright green and tender. Remove from heat and set aside.

            Make the Filling:

              - In a mixing bowl, combine the steamed broccoli, sharp cheddar cheese, cream cheese, sour cream, milk, green onions, garlic powder, salt, and black pepper. Mix well until everything is thoroughly combined and creamy. Adjust seasoning if needed.

                Stuff the Potatoes:

                  - Once the potatoes are fully baked, remove them from the oven and allow them to cool slightly. Carefully slice the potatoes in half lengthwise and scoop out a little bit of the flesh, creating enough space for the filling.

                    - Add the scooped potato flesh to the bowl with the broccoli and cheese mixture, and mix until well incorporated.

                      Fill & Top:

                        - Generously spoon the broccoli cheddar filling back into each potato half. If desired, top with extra cheese or bacon bits for added flavor.

                          Final Bake:

                            - Return the stuffed potatoes to the oven and bake for another 15-20 minutes, or until the cheese is melted and bubbly.

                              Garnish and Serve:

                                - Remove from the oven, let them cool for a few minutes, and garnish with extra green onions and a sprinkle of red pepper flakes if you like some heat. Serve warm and enjoy your loaded potatoes!
