1 lb (450g) ground beef (or turkey)

1 cup diced onions

2 cups cauliflower florets (fresh or frozen)

1 cup shredded cheddar cheese

1 cup sliced dill pickles

4 large eggs

1 cup heavy cream

2 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

Salt and pepper to taste

1/2 cup sugar-free ketchup (optional)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish lightly with cooking spray or olive oil.

    Cook the Meat: In a large skillet over medium heat, add the ground beef and onions. Season with garlic powder, onion powder, smoked paprika, salt, and pepper. Cook until the meat is browned and fully cooked, about 7-10 minutes. Drain any excess fat if necessary.

      Prepare Cauliflower: If using fresh cauliflower, steam or microwave florets until just tender, about 3-4 minutes. If using frozen, thaw them completely and let them drain to avoid excess moisture in the casserole.

        Combine Ingredients: In a large mixing bowl, whisk together the eggs and heavy cream. Stir in the cooked beef mixture, cauliflower, half of the shredded cheese, and dill pickles. Mix until everything is evenly incorporated.

          Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it out evenly. Top with the remaining shredded cheese.

            Bake: Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the cheese is bubbly and lightly golden.

              Optional Topping: If desired, drizzle sugar-free ketchup over the top during the last 5 minutes of baking for added flavor.

                Garnish: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if using.
