1 ½ cups all-purpose flour

1 cup rolled oats

½ cup granulated sugar

½ cup brown sugar, packed

1 tablespoon baking powder

½ teaspoon baking soda

1 cup buttermilk (or non-dairy milk)

½ cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon vanilla extract

2 cups fresh peaches, peeled and diced (about 3 medium peaches)

½ cup chopped pecans or walnuts (optional)

Extra sugar, for sprinkling on top (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, rolled oats, granulated sugar, brown sugar, baking powder, baking soda, salt, and ground cinnamon until well combined.

      Combine Wet Ingredients: In another bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until thoroughly mixed.

        Combine Mixtures: Pour the wet mixture into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are perfectly fine.
