1 lb elbow macaroni

4 cups sharp cheddar cheese, grated

1 cup Gruyère cheese, grated

4 tbsp unsalted butter

4 tbsp all-purpose flour

4 cups whole milk

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

1/2 tsp black pepper

Salt to taste

1/2 cup truffle oil

1 cup panko breadcrumbs

1/4 cup parsley, finely chopped (for garnish)

Instructions
 

Cook the Macaroni: In a large pot, bring salted water to a boil. Add the macaroni and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 2 minutes, stirring constantly. Gradually add the whole milk while whisking to prevent lumps. Continue to stir until the mixture thickens and bubbles, about 5-7 minutes.

      Add Spices: Stir in the garlic powder, onion powder, smoked paprika, black pepper, and a pinch of salt. Mix well.

        Incorporate the Cheese: Remove the saucepan from the heat and slowly stir in the grated sharp cheddar and Gruyère cheeses until fully melted and smooth.

          Combine Macaroni and Sauce: Add the cooked macaroni to the cheese sauce and mix until every piece is well coated. Drizzle in the truffle oil and stir gently to incorporate.

            Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the macaroni and cheese mixture to a greased 9x13 inch baking dish, spreading it out evenly.
