1 ripe mango, peeled and diced

1 cup coconut milk (or almond milk for a non-coconut option)

1/4 cup chia seeds

2 tablespoons honey or maple syrup (adjust to taste)

1/2 teaspoon vanilla extract

A pinch of sea salt

Fresh mango slices and mint leaves for garnish (optional)

Toasted coconut flakes for garnish (optional)

Prepare the Chia Base: In a mixing bowl, combine the coconut milk, chia seeds, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Whisk together until all ingredients are well combined.

    Let it Sit: Cover the bowl and let the mixture sit for about 5-10 minutes. After this time, whisk again to break up any chia clumps, ensuring an even consistency.

      Chill the Mixture: Transfer the chia pudding mixture to individual serving glasses or cups. Cover with plastic wrap or a lid, then refrigerate for at least 3-4 hours, preferably overnight. This allows the chia seeds to absorb the liquid and create a lovely gel-like texture.
