4 ripe mangoes (about 4 cups of mango puree)

1 cup freshly squeezed lime juice (about 4-5 limes)

1 cup granulated sugar

1 cup water

Zest of 2 limes (for a zesty kick)

A pinch of salt

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Mangoes:

    - Peel the mangoes, remove the pits, and chop the flesh into chunks. Place the mango chunks into a blender or food processor.

      Make the Sugar Syrup:

        - In a small saucepan, combine the water and granulated sugar. Heat over medium heat, stirring until the sugar is completely dissolved. Remove from heat and let cool.

          Blend the Sorbet Mixture:

            - Add the cooled sugar syrup, freshly squeezed lime juice, lime zest, and a pinch of salt to the blender with the mango chunks. Blend until you achieve a smooth and creamy puree.

              Taste and Adjust:

                - Taste the mixture and adjust the sweetness if necessary by adding more sugar or a splash of lime juice for extra tang. Blend again if adjustments are made.

                  Chill the Mixture:

                    - Transfer the mango-lime mixture into a shallow dish and cover tightly with plastic wrap. Place it in the freezer for about 1-2 hours until it starts to firm up.

                      Churn the Sorbet:
