1 lb (450g) large shrimp, peeled and deveined

2 ripe mangoes, diced

2 ripe avocados, diced

1 medium red bell pepper, finely chopped

1/2 red onion, finely chopped

1 jalapeño, minced (optional, for spice)

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

3 tablespoons olive oil

2 tablespoons fresh lime juice

1 teaspoon honey (optional)

Salt and pepper, to taste

Lime wedges, for garnish

Instructions
 

Prepare the Shrimp: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the shrimp and season with a pinch of salt and pepper. Cook for 2-3 minutes on each side until they are pink and opaque. Remove from heat and let cool slightly.

    Make the Dressing: In a small bowl, whisk together the remaining olive oil, lime juice, honey (if using), and a bit of salt and pepper. Adjust seasoning based on your taste preference.

      Combine the Salad Ingredients: In a large mixing bowl, combine the diced mangoes, avocados, red bell pepper, red onion, jalapeño, cherry tomatoes, and cilantro.

        Add the Shrimp: Once the shrimp have cooled, add them to the bowl with the other salad ingredients.

          Dress the Salad: Pour the dressing over the salad and gently toss everything together until well combined, being careful not to mash the avocados.
